The feeling of the Grande Cafe embodies the antithesis of anything remotely heavy or overtly bold, (a lovely reprieve for classically dark days in the city) but instead, offers an inviting and warm space of lightness, openness, and of course, surrounded and encompassed by their namesake focus: botany. Designed by Ste Marie Studio, located within the second floor of the renowned and stunning Fairmont Pacific Rim, Botanist is not only a place that seats thousands of the hotel’s tourists each year, but equally so, where many locals reserve tables for Birthdays and other such happy celebrations.
It might be an obvious choice from an accolades standpoint—deservingly named one of North America’s 50 Best Bars, amongst a lengthy, growing list of awards, but it is within the the experience itself—the details of the interior, the service, cuisine, and cocktails that create an exemplary experience that many wish to return for. Though each space within the restaurant occupies its own feeling of sort, the over-arching mood that embodies the entirety is one of happiness and enjoyment.
Wondrous cocktails and dishes are beautiful to the sight and taste, finely made, and are a true vivid expression and exploration of biodiversity within their approach. Masterminds Chef Hector Lagua and Grant Sceney (Creative Beverage Director) marry both uniqueness and respect within their visions, consistently looking towards the most premium selection of local products that they can bring together for the restaurants’ creations. Live music may lend to an even more special takeaway, and whether one has a penchant for refined flavours and expression, watery views met with the city’s lights, or the world of botany, the restaurant comforts guests with “living room hospitality” and a fond memory, truly.
